I agree that roasted carrots are inferior, i usually just like some baby carrots on the side in the bag, but cooking vegetables OTHER than carrots the right way makes them delicious: Broccoli, brussels sprouts, you name it. The issue is a lot of people dont care to look up how to cook the vegetables properly so they just boil everything.
